What's the best coffee shop in Denver?

As far as chains, I'm really impressed with Dazbog Coffee. My cashier the other day explained that the Dazbog method of folding ingredients is an art form and they have a strict foam ratio for their espresso drinks...I'm not a barista so it was a little over my head, but basically they make their coffee well and it shows! It simply tastes better. I also like the Starbucks inside Barnes and Noble on Colorado Blvd because of their crazy hours. They open at 4:30 am and close at 2 am everyday! It's a great place to hit the books with some friends for an all night study sesh
It's a little kitschy, but I absolutely love The Gypsy House Cafe on 13th and Marion. It's a bit of a throwback, a little bit hipster, a little bit hippy, but always fun with great coffee, hookah, home-made food, and gelato... The owner is an old Greek lady who comes across as very stern and harsh, but once you get to know her, she's very sweet. http://www.yelp.com/biz/gypsy-house-cafe-denver
I'm sure there is some I haven't been to but my favorite Colorado coffee shop is Caribou Coffee. They have several locations and I think their coffee is so much better than the chain competitors. They use a higher quality bean so they don't need to roast it as long so you don't get that bitter taste. It's certainly worth giving it a try!
