I'd recommend booking out any hotel room you can get your hands on overlooking Darling Harbour. That way you avoid the crowds and can enjoy the fireworks with room service.
Check out the Best Western or Rydges in Surry Hills, Ibis Sydney or the Hilton, to name just a few.

Or pack up a picnic and head to:
Elkington Park or Illoura Reserve in Balmain
Embarkation Park in Potts Point
Mort Bay Park in Brichgrove
(just keep in mind alcohol is prohibited in most public parks)

Taronga Zoo always do a great NYE event with food and booze available, tickets usually go on sale in September.

I also like to head a bit further out of town to Robertson Park in Watsons Bay or Duff Reserve in Point Piper, from here you can see the whole harbour and a very pretty view of all the fireworks going off around the bay at midnight.
