I find Bicycle Superstore in Narre Warren is really good for all things cycling http://bicyclesuperstorefountaingate.bikeit.com.au/.
Smith Street Cycles in Collingwood is also a good one if you're based in the city http://www.smithstreetcycles.com.au/.
I also like Bike Gallery http://www.bikegallery.com.au/ and Cycles Galleria is good for repairs and parts http://cyclesgalleria.com.au/both are located in Camberwell.

Another bike shop to check out on the North side is Lekker. They are at the higher end of vintage bike market, however their bikes look awesome, and ride very well. Check them out at https://www.lekkerbikes.com.au/ or visit their store at 23 Provost St, North Melbourne. Cheers.
