For beginners I'd recommend Power Living. They have studios in South Melbourne and Fitzroy https://www.powerliving.com.au/studios/.
The studio at Nth Yoga in Fitzroy is really cool as its a converted warehouse http://northyoga.com/home. They hold $5 student classes on Wednesdays and $5 community classes on Fridays.
For those that like their yoga hot I'd go for Bikram Hot Yoga in Ascot Vale http://www.bikramyogaav.com.au/.
KULA YOGA is my local studio, I recently took up the 10 days of unlimited yoga for $25, a really great way to try out all the classes on offer.
